You wipe them down on Saturday. By Wednesday, they feel tacky again. You buy a stronger degreaser. You spend an hour on a step stool. Two weeks later that same yellow film is back on the cabinet doors above the stove.
You start wondering if it’s the paint, the cabinets, the weather, or just what happens when you cook at home.
It’s none of those. And the reason your kitchen keeps losing this fight has nothing to do with how hard you scrub.
The real problem happens before you ever see or smell anything wrong. Most of us learned the same thing growing up: flip on the fan when things start smoking, or when the garlic gets loud, or when a strong smell hits. If nothing’s smoking, why put up with the noise?
That habit is exactly why your cabinets keep getting sticky.

The sticky yellow stuff isn’t dust. It’s your cooking oil.
Walk over to a cabinet above your stove. Run a finger along the bottom edge. If it feels tacky, or your finger comes away with a yellow-brown smudge, you’re not touching dust. You’re touching a thin layer of your own cooking oil. Dust just stuck to it later.
The U.S. Environmental Protection Agency (EPA), in its official guide to cooking and indoor air, tells people to turn the range hood on any time you cook, and to leave it running for 10 to 20 minutes after you’re done. Not just when something smokes. Every time.
There’s a reason the EPA words it that way.

Every time you heat oil in a pan, some of that oil doesn’t stay in the pan. Tiny drops float up on the hot air and drift across the room. They land on cabinets, walls, the ceiling, even the light fixtures. Over the next few hours, they dry into a sticky skin. Dust in the air lands on that skin and gets stuck. Now you’ve got gunk your regular spray can’t touch.
This isn’t a guess. A U.S. patent for degreaser products spells it out: “aerosolized grease” (basically, cooking oil turned into a mist that floats through the air) lands on kitchen surfaces during any cooking with fats or oils. Once it lands, it turns into a thick, jelly-like layer that grips the surface hard. That’s why your all-purpose cleaner keeps failing.
There’s a paint problem on top of that. A painting company called Cesar’s Painting points out that a wall right next to a gas stove can hit 90 to 100°F (32 to 38°C) during heavy cooking. That heat softens most kitchen paint just a touch, which makes the surface a little sticky on its own. Sticky paint grabs floating oil even faster than cool paint does. That’s the yellowing you see on cabinet doors and the wall behind the stove.
Why your cabinets stay greasy even when you never see smoke
You’ve been taught to think: no smoke, no problem. If the pan isn’t smoking, the fan can wait.
That’s the same thinking indoor-air scientists say is quietly wrecking home kitchens. Brett Singer, a senior scientist at Lawrence Berkeley National Laboratory and one of the most-quoted range hood researchers in the country, has put it plainly: people skip the fan because they think it’s only needed when there’s smoke, a strong smell, or steam. But we can’t see or smell most of what comes off a hot pan, so we skip the fan at the exact times we need it most.
A study by Torkmahalleh and other researchers, published in the Journal of the Air & Waste Management Association, tested seven common cooking oils at everyday cooking temperatures. Even at 131 to 197°C (268 to 387°F), well below the point where any of those oils would start to smoke, the pans were already throwing off a huge amount of tiny oil bits, the same size that ends up stuck to your cabinets.
In plain words: your oil starts spraying invisible mist into your kitchen the second the pan gets hot. Long before it ever smokes.
By the time you see any haze above the stove, that mist has already been landing on your cabinets for a few minutes. Turning the fan on right then is closing the barn door after the horse is out. A separate study by Buonanno and other researchers, shared through the U.S. National Institutes of Health, found that this cooking mist reaches nearby rooms in about 10 minutes. It doesn’t stay near the stove. It spreads.
Do that 300 times a year for five years, and you get exactly the sticky yellow film you keep trying to scrub off.

The free, one-second fix
If you read all of that and thought, that’s basically what I do, you’re in good company. A Lawrence Berkeley National Laboratory survey found that most people don’t run their range hood most of the time they cook, mostly because they don’t think it’s needed unless something’s smoking.
The fix costs nothing. Takes less than a second. It’s what the EPA, Washington State Department of Health, and Colorado Department of Public Health recommend.
Turn your range hood on the second you turn the burner on. Every single time. Even for a fried egg.
Not when the pan gets hot. Not when the oil starts smoking. Not when you catch a smell. When the burner clicks on, the fan clicks on.
To make it stick:
- Flip the fan switch as part of turning on the stove. One motion, not two decisions. Burner on, fan on. Low or medium speed is enough for most everyday cooking.
- Cook on the back burners when you can. The EPA and Washington State Department of Health both point this out. The rising mist from a back burner goes straight up into the fan. From a front burner, half of it drifts out past the fan and right onto your cabinet doors.
- Leave the fan running for 10 to 20 minutes after you finish. That’s the EPA’s exact range. The oil mist doesn’t stop rising the second you turn off the flame.
- If your range hood recirculates the air instead of blowing it outside, it still helps, but not as much. Guidance shared through the Salt Lake City Green Blog notes that hoods that vent outside do a much better job. If yours recirculates, keep the filter clean and crack a nearby window when you can.
- Clean the grease filter every one to three months. A clogged filter can’t pull air through. Metal mesh filters go straight in the dishwasher on the top rack. Charcoal filters usually have to be swapped out.
- Use a lid or a splatter screen on frying pans when the recipe lets you. Less oil in the air means less landing on your cabinets in the first place.
That’s it. No new appliance. No expensive cleaner. No hour on a step stool. Just one flick of the switch, every time, from now on.
The biggest kitchen win you can pull off this year is a habit change that takes less than a second. All those cabinet scrubbing sessions are you paying, over and over, for a one-second choice you didn’t make five minutes earlier.
Flip the switch when the burner goes on. Your cabinets will thank you.
